Reverse Seared Ribeye


We recommend starting with a 16 oz, 1" thick cut Ribeye

When ready to cook, set the temperature on your Traeger to 225°F and preheat, lid closed, for 15 minutes. For optimal flavor, use Super Smoke if available.

Season steaks on both sides with Eat Barbecue Most Powerful Stuff. Place steaks on the grill grate and smoke for 45 to 60 minutes or until an instant-read thermometer inserted in the thickest part of the meat registers 115 degrees F.

Remove steaks from grill, increase the temperature to 500°F and preheat with Grill Grates inserted on top of the Traeger Grill Grates, lid closed for 15 minutes. Allow steaks to rest for 10 minutes while grill preheats.  At this time you could dust a little more Eat Barbecue Most Powerful Stuff on both sides.

Place steaks back on preheated grill and sear for 5 minutes on each side or until internal temperature registers 125°F. 

Let steaks rest for 10 minute (during the rest, the steak will rise 5°F to 130°F finished temperature for medium rare), then slice and serve. Enjoy!
