Smo-Fried Peach SZN Wings

Ingredients:
5 lbs. Of Chicken Wings (Separated drums & flats)
CornCookers | Poultrygeist Chicken Rub | Iowa BBQ Store
CornCookers | Texas Road Trip AP Rub | Iowa BBQ Store
CornCookers | Peach Szn BBQ Sauce + Glaze
Directions:
Fire-up your smoker - For this recipe, we used the Traeger Timberline XL (For the ease of smoking & frying all on one unit). Set temp to 225. While that smoke bath is getting ready, we’ll prep the wings.
Prep:
Super simple. Pat wings completely dry (this will ensure we get that crispy skin that we’re looking for). Once dry, hit the bottom side of the wings with a good dose of the Poultrygeist Chicken rub. Next, give the same side a light coat of Texas Road Trip. Let the wings rest for about 5-10 minutes before flipping and seasoning the top side. Rest another 5-10 minutes and your smoker should be ready to roll.
The Cook:
Place wings directly on the grate with the smoker set at 225 (Hit the super-smoke button if you’re not scared). Our goal here is to get as much flavor & smoke on these wings as possible. Smoke wings until they reach an internal temperature of 145 degrees F, flipping once midway through about 40 minutes. This smoke session should last about 1 hour to 1 ½ hours.
Planning ahead, have your fryer oil hot and ready. Oil should be 350-375 degrees F in a large pot/pan. We prefer cast iron but use what you got. We use the Traeger Induction cooktop on the Timberline for this. Fry for 2-3 minutes per side, until the skin is golden brown and the internal temperature reaches 175 degrees. Don’t overcrowd your pan, you can do this in batches as needed.
GET SAUCY:
If you like your wings naked, hit em’ with a dusting of that Texas Road Trip and enjoy. However, we’re kicking it up a notch on the flavor scale by tossing them in our award-winning Peach SZN BBQ Sauce. Make sure to give each wing a good coat of this delicious sauce!
