Smokey Meatball Subs

Ingredients:
- 3 lbs Swanstrom Beef (In-Store Only)
- 2 lbs Ground Pork
- 6 Eggs
- 1 Large Bag Pork Rinds
- 6 Sub Rolls
- 2 Cups Shredded Mozzarella Cheese
- Warehouse Barbecue Co. Apple Habanero BBQ Sauce
- The Real Man Meat BBQ Homestyle Rub
Directions:

Prepare the Meatballs:
- In a large bowl, mix the ground beef, ground pork, crushed pork rinds, rub and egg.
- Roll the mixture into evenly sized meatballs.
- Lightly dust the formed meatballs with more Rub.

Smoke the Meatballs:
- Preheat your smoker to 300°F.
- Place the meatballs on the smoker and cook for 45 minutes to 1 hour, or until the internal temperature reaches 165°F.

Glaze & Finish:
- In the last 10 minutes of cooking, brush the meatballs with Apple Hab sauce.
- Let them finish cooking until the sauce is set and slightly caramelized.

Assemble the Subs:
- Place the meatballs on sub rolls, top with shredded mozzarella, and return to the smoker (or oven) just until the cheese melts.

Serve & Enjoy:
- Serve hot and enjoy during the big game!
